Chop the zucchinis and sauté them for 10 minutes in a saucepan with oil.
Pour in the vegetable broth and let it cook for 20 minutes.
Add the ginger and blend until you get a smooth texture.
Add salt and plate, decorating with some Espinaler Natural Mussels.
Give it the final touch with a drizzle of Espinaler Spicy Oil.
