Tomato Tartare with Anchovies and Espinaler Sauce

PREPARATION

Dice the tomato and finely chop the onion.

Place them in a bowl and add chopped Espinaler Anchovies.

Separately, prepare a vinaigrette with 3 parts extra virgin olive oil and 1 part Espinaler Sauce.

Whisk to emulsify and add to the mix.

Season with salt and mix well. Use a ring mold to plate.

Garnish with chopped Espinaler Olives, an Anchovy, and chives (optional).
