Espinaler Sauce
Espinaler Sauce: history, uses and why it is an icon of the Mediterranean aperitif
At Espinaler, we have been connected to the world of the aperitif for more than a century. For us, the aperitif is not just a gastronomic moment, but a way to share, gather and enjoy time without rushing.
In this context, one of our most emblematic products was born: Espinaler Sauce, which today has become a true icon of the Mediterranean aperitif.
History of Espinaler Sauce: our origins
In 1950, we took a key step in our history with the creation of the original Espinaler Sauce recipe. The author of this iconic formula was Ventureta Roldós, wife of Joan Tapias, who created a unique combination using simple yet carefully selected ingredients: high-quality vinegar, red paprika, black pepper and a secret blend of spices.
The sauce was created with a very clear purpose: to accompany and enhance the flavor of seafood preserves served at Espinaler. The result was a sauce with its own personality — balanced, distinctive and unmistakable — capable of transforming the aperitif experience.
Over the years, the recipe created by Ventureta became a true reference in aperitif sauces and has become world-renowned. Today, we continue to produce it faithful to its origins, respecting the recipe and the know-how passed down from generation to generation.
Uses of Espinaler Sauce: versatility at the table
Although Espinaler Sauce is closely linked to the aperitif tradition, over time we have seen its use expand and adapt to many different ways of enjoying it.
How we use Espinaler Sauce
- To accompany seafood and fish preserves, such as cockles, mussels or clams
- With potato chips, olives and snacks
- As a dressing for salads and cold dishes
- To add a special touch to fried eggs, omelettes or calamari
- Even as a perfect complement to vermouth
Its liquid texture and tangy, spicy flavor profile enhance the taste of foods without overshadowing the main ingredient.
